Mexican Chicken with Refried Beans and Guacamole Recipe

This Mexican chicken with refried beans and guacamole is going to tingle your tastebuds! It’s super quick and easy plus it’s healthy and exploding with flavour. It’s an ideal weeknight meal and freezes and reheats beautifully for prep meals throughout the week.

Ingredients:

  • 2 Chicken Breasts
  • 100g smoked bacon bits/Pancetta
  • Mushrooms sliced
  • Half cup peas
  • 1 Red onion diced
  • 1tbsp paprika
  • 1tsp chilli
  • 1tbsp cumin seeds
  • 1tbsp mustard seeds
  • 2-3tbsp Worcester sauce
  • 1tbsp coconut oil

Method:

  1. In a medium pan use the coconut oil to cook the red onion until soft, add the bacon until cooked.
  2. Add the chicken, cook for 6mins then add and mix paprika, cumin seeds, mustard seeds and Worcester sauce.
  3. Add the mushrooms and peas, cook for another 15-20mins.
  4. Serve with refried beans and guacamole. (see recipe below)

For the guacamole...

Ingredients:

  • 2 Avocados
  • 1 Red pepper
  • 1 Red onion
  • 4tbsp olive oil
  • 1tbsp chilli
  • 1 clove garlic
  • Half a lemon

Method: 

  1. Dice the red onion and fry till soft
  2. In a blender add the red pepper, avocado, garlic, olive oil and cooked red onion. Squeeze juice from lemon and add to taste as required.
  3. Blend and serve
