Lemon Zest Energy Balls Recipes

These Lemon Zest Energy Balls are sweet, no bake treats that take minutes to throw together, are filled with good-for-you ingredients, and make for quick, on-the-go breakfasts and snacks.

What You'll Need:

  • 1/4 cup Old fashioned rolled oats
  • 1/4 cup nut butter or seed butter - peanut butter, sunflower seed butter et.
  • 3 pitted dates
  • 1/2 Tbsp lemon juice
  • 1/2 Tbsp chia seeds
  • 1/2 tsp cinnamon
  • Zest from a fresh lemon

Method:

  1. Add the oats, nut butter, dates, lemon juice, lemon zest, cinnamon and chia seeds into a food processor. Pulse until the mixture becomes a soft dough-like consistency. You may need to stop and scrape the sides of the processor a few times.
  2. You can store your energy balls in an airtight container in the refrigerator or freezer. They’ll last up to 1-2 weeks in the fridge and up to 3 months in the freezer.
