Chicken with Tomato & Caper Sauce Recipe

Looking for a hearty, healthy dinner? This chicken with tomato and caper sauce takes under an hour, but it tastes like it's been simmering on the stove for hours. Serve with steamed broccoli, green beans and courgettes.

Serves 2-3

Ingredients:

  • 2-3 chicken breasts
  • 2tbsp coconut oil
  • 1 large onion
  • 400g Tinned tomatoes
  • 30g tomato puree
  • 250mls vegetable stock
  • 1-2 tbsp capers
  • Black pitted olives cut in half
  • Dried Rosemary
  • Salt & Pepper

Method:

  1. Finely chop the onion and fry in 1tbsp coconut oil until onion is soft.
  2. Add tin tomatoes, capers, olives & rosemary.
  3. Stir together and add the stock followed by the tomato purée.
  4. Cover and simmer for 20-30mins
  5. Add more water if needed.
  6. For the chicken: Cut chicken into cubes
  7. In a pan heat up 1tbsp coconut oil & fry the chicken until nicely browned.
  8.  Serve with steamed broccoli, green beans and courgettes.
