Chicken & Avocado Salad Recipe

A delicious and easy to make salad, perfect for spring!

You will need:

  • 1 x cooked chicken breast
  • 1/4 Avocado 
  • Tomatoes
  • Lettuce leaves
  • Peppers        
  • Cucumber
  • Fresh coriander
  • Mix seeds (optional)
  • Chopped Gherkins (optional)
  • Balsamic vinegar and Olive oil (I use one 1 lid measure of each.)
  • Squeeze of lemon or lime (optional)

Method:

  1. Cut chicken into strips
  2. Cut and de-seed peppers into thin strips
  3. Cut tomato cucumber & avocado
  4. Place Lettuce leaves on a plate/bowl arrange rest of ingredients on top and drizzle with balsamic vinegar, olive oil & squeeze of lemon/lime.
  5. Sprinkle with mix seeds
  6. This can be made with any vegetable of your choice, grated carrots, shredded cabbage, grated courgette etc.
  7. Can also be served with some rice/pasta or bread.
