Carrot Cake Energy Balls Recipe
Oct 26, 2023These Carrot Cake Energy Balls are sweet, no bake treats that take minutes to throw together, are filled with good-for-you ingredients, and make for quick, on-the-go breakfasts and snacks.
What You'll Need:
- 1/4 cup Old fashioned rolled oats
- 1/4 cup of grated carrots
- 1/4 cup nut butter or seed butter - peanut butter, sunflower seed butter etc.
- 1/4 cup raw pumpkin seeds
- 1/4 cup of shredded coconut - plus extra for rolling
- 3 pitted dates
- 1 Tbsp maple syrup or honey - optional
- 1/2 Tbsp chia seeds
- 1/2 Tbsp water
Method:
- Add the oats, grated carrot, nut butter, dates, pumpkin seeds, coconut, maple syrup, chia seeds and water into a food processor. Pulse until the mixture becomes a soft dough-like consistency. You may need to stop and scrape the sides of the processor a few times.
- Once made into balls you can roll the balls and cover with the remaining shredded coconut.
- You can store your energy balls in an airtight container in the refrigerator or freezer. They’ll last up to 1-2 weeks in the fridge and up to 3 months in the freezer.
