Carrot Cake Energy Balls

These Carrot Cake Energy Balls are sweet, no bake treats that take minutes to throw together, are filled with good-for-you ingredients, and make for quick, on-the-go breakfasts and snacks.

What You'll Need:

  • 1/4 cup Old fashioned rolled oats
  • 1/4 cup of grated carrots
  • 1/4 cup nut butter or seed butter - peanut butter, sunflower seed butter etc.
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup of shredded coconut - plus extra for rolling
  • 3 pitted dates
  • 1 Tbsp maple syrup or honey - optional
  • 1/2 Tbsp chia seeds
  • 1/2 Tbsp water

Method:

  1. Add the oats, grated carrot, nut butter, dates, pumpkin seeds, coconut, maple syrup, chia seeds and water into a food processor. Pulse until the mixture becomes a soft dough-like consistency. You may need to stop and scrape the sides of the processor a few times.
  2. Once made into balls you can roll the balls and cover with the remaining shredded coconut.
  3. You can store your energy balls in an airtight container in the refrigerator or freezer. They’ll last up to 1-2 weeks in the fridge and up to 3 months in the freezer.
  4. Enjoy!
